Café Dining at Home
One of the things I want to work on this year is to aim my diet in a low carbohydrate healthy fat (LCHF) direction to get a bit healthier and trim back some of the menopausal weight gain I have developing around my lower belly.
This isn't a New Year's Resolution - if I call it that it will surely just fail. It is a change in habit so I am doing it slowly!
I have started a couple of weeks ago with circadian fasting. The principle behind this is keeping your eating time to an 8 or 10 hour period each day and fasting the rest of the time. It is to limit the number of times you release insulin into you blood stream. This has a number of proven benefits - not least being it can help with weight loss as insulin is not only for managing glucose in the blood it is also a fat storage hormone that makes it harder to shed stored fat if it is repeatedly being released.
Breakfasts are the first meal to be changed so I have done some reading and got some recipes lined up. This morning I had baked ricotta and pesto on avocado on low carb toast with rocket and spinach salad - all made from scratch!
It was fun to make and I was so pleased with how it turned out - just like the picture in the book. I initially thought it wasn't very big but it was surprisingly filling. It tasted delicious and doubled as the type of meal I might have in a café so felt like a treat to have on a lazy Sunday morning at home for a fraction of the cost of eating out!
