Colourful Veges

 Tea tonight was a pork shoulder bought on special which I cooked in the slow cooker for much of the day. The house smelled delicious this afternoon! I then decided to roast veges to go with it and managed to rustle up several from the fridge and the garden. The ones in the fridge looked a bit worse for wear but once peeled and trimmed they looked much more appetising and I knew they would cook up nicely.

Parsnip, kumara and potato went into the pot to parboil before roasting. Capsicum, zucchini and red onion went straight into the roasting pan. I couldn't resist taking this photo after picking the last of my broccoli sprouts and one of my purple cauliflowers and seeing how beautifully colour co-ordinated they all looked together.

We ended up with a delicious, filling, healthy and low cost meal feeding five of us for around $15.00 and with some leftovers. Very satisfying and easy too!
