Oaty Chia Smoothie Shots
I found this recipe in a book I have been reading about low carb healthy fat eating - something that resonates with me after working in the health profession for 25 years and seeing people getting fatter and sicker on low fat diets (which ultimately ends up being high carbohydrate diets especially sugar).
I thought I would try this recipe to use up some of the dry goods I bought a while ago in a fit of good health. It turned out they were actually really easy and tasted good - even the fussy teenagers in the house liked them! They were also surprisingly filling so they made a good breakfast starter for something different from the norm. I've included the recipe below if you'd like to try them!
Vanilla and Chia Seed Oat Smoothie Shots
1 1/4 cups natural rolled oats, 40g raw almonds, 1 tbsp chia seeds, 1 tsp natural vanilla bean paste, 200ml milk, 300g Greek style yoghurt, ground cinnamon for sprinkling and mint leaves for garnish (optional)
Combine the oats, almonds, chia seeds, vanilla and milk in a bowl, Cover and refrigerate for a minimum of one hour or overnight.
Spoon into a blender, add yoghurt and blend until smooth. (Add a little cold water to thin if desired)
Pour into small serving glasses, sprinkle with cinnamon and garnish with mint. Serve immediately.
