Nutty Granola

Following on from yesterday and needing to use up some of my dry goods I decided to start the day differently and make some breakfast granola. I am delighted with how it turned out and only wish I had made a double batch to make the container look fuller!


I made the recipe up so have included it below if anyone is interested to try it. If you don't have access to Maltexo (malt syrup) you can substitute it with honey but it will make it a lot sweeter tasting.


Nutty Granola 3 cups coarse rolled oats 2/3 cup chopped unsalted almonds 1/2 cup pumpkin seeds 1/3 cup sunflower seeds 2 tbsp black chia seeds 2 tsp ground cinnamon 130g butter, chopped 2 heaped tbsp Maltexo 2/3 cup dried cranberries 1/3 cup dessicated coconut


Preheat the oven to 160°C Mix oats, almonds, seeds and cinnamon in a bowl. Soften butter and Maltexo in microwave. Stir through oat mixture. Spread out in roasting pan. Bake 20-25 minutes stirring thoroughly once after 15 minutes. Allow to cool. Add cranberries and coconut and stir through. Store in airtight container. Serving suggestion - try with oat or coconut milk, plain Greek yoghurt and fresh fruit.
