Fisherman's Pie

 I enjoyed pottering making tea tonight. It was Fisherman's Pie - a recipe I have been making for over 10 years and it has always been a hit with the kids and a great way to get fish into them. The recipe came from a children's cookbook that one of the kids got out of the library. I have copied it into my recipe book as they all liked it so much and it has been made many times since.


It has all the elements of comfort food. A mashed potato topping (I have taken to cheating and use potato flakes whipped up until soft and creamy), cheese and a white sauce. I add spinach to the original recipe so it has some vegetable included and everyone wolfs it down.


It is tasty and filling and cost effective and as everyone eats it it is always a winner in my book. And best of all there are always left overs to heat up and have for lunch the next day!
I've put the recipe below. I can't remember the book it came from so unable to credit it to anyone but then I do my own version anyway which is what I've written. Enjoy!


Fisherman's Pie
1/2 packet instant potato flakes
450g white fish                                            85g butter
4 hard boiled eggs                                       55g flour
3 cups baby spinach leaves                         600ml milk
parsley                                                        1 cup grated cheddar cheese
salt and pepper

Cut fish into 2cm chunks and layer in greased oven proof dish. Chop eggs and parsley and layer with fish.
Make white sauce with butter flour and milk using Roux method (I do this in the microwave)
Stir the spinach leaves through the white sauce and pour over the fish and eggs.
Make the instant potato according to the packet instructions. Spoon scoops of potato over top of sauce to cover completely.
Sprinkle cheese on top.
Bake at 200 degrees C for 30 minutes until golden.
Can be served with a salad or other steamed green vegetable if desired.
