Soup Kitchen

 After a second day working hard in the garden rakiing more leaves, sorting out the two rubbish piles and doing some weedspraying I was feeling very tempted to get takeaways for tea. However while showering to wash off the dirt for the day I had an idea about what I could make for tea (don't some of the best ideas occur in the shower!). 


I had these cheesy pastry twists in the freezer for ages after buying them on special at a bakery. I had a pumpkin in the cupboard and some vegetables that needed using up like carrots and celery. I chopped them all up and cooked them with some onion in butter to soften them.


Next I added a packets of vegetable soup mix to give some flavouring and some split peas and lentils. Added the water and simmered for about 20 minutes or so. while this was cooking I peeled apples with my little contraption (see a previous blog post). I made apple and blackcurrant crumble using some of the large supply of frozen blackcurrants I have in the freezer and some crumble topping made with a faiked biscuit mix my daughter has sitting in the fridge.


Once the soup was cooked I blending it to a smooth consistency with a stick blender and we all sat down to a great winter meal of soup and pastry twists followed by apple and blackcurrant crumble with icecream. A delicious, warming, tasty and healthy meal that cost a fraction of takeaways and didn't involve any driving to get it! Best of all everyone liked it and ate it with no complaints! Perfect!
